The choice of fish is upto you, but me, I prefer the followng;&lt;br /&gt; &lt;br /&gt;Ingridients:&lt;br /&gt;Fish (Galungong, Hiwas, or Tulingan (Baby Tuna).)&lt;br /&gt;salt&lt;br /&gt;dried kamyas &lt;br /&gt;Tamarind roots, or Singang mix&lt;br /&gt;Pork fat &amp; skin&lt;br /&gt;* Prepare your fish first, make sure the fish is cleaned well and salted.  For the tulingan, you have to slice&lt;br /&gt;   the bottom of the fish in order to flatten the fish a bit.  &lt;br /&gt;* In a deep pan, put little oil and fry up the pork fat and skin until soft enough, then remove pork&lt;br /&gt;* Fry the fish lightly first before addng the water (btw, just have enough water to keep the fish halfway submerged)&lt;br /&gt;   and boil the fish for one hour.&lt;br /&gt;* Meanwhile, pre-soak the kamyas in water before finally adding to the cooked fish&lt;br /&gt;* After 1 hour cooking, add the Tamarind roots, or the Sinigang Mix, the kamyas, and the fried pork to the fish, then &lt;br /&gt;  simmer for another 5 minutes on low heat&lt;br /&gt;Serve the fish wrapped in bannanna leaves, or fry the fish untl golden brown along with the kamyas, and serve with&lt;br /&gt;white rice or Sinangag (Garlic Fried Rice -see post on Garlic Fried Rice-). Glorious PORK!!&lt;br /&gt;&lt;br /&gt;yes yes..everyone who knows me, knows that I love pork!  If I'm not eating pork on the table, I'm usually stuffing my face &lt;br /&gt;with chicharon or pork rind.  Not to say this is a very healthy diet, but are we really going for healthy?.. NO! We're talking about PORK here! We're talking skin, fat, grease! oooh yeah!  So to prove my love for this four legged stinker, here's a&lt;br /&gt;few recipes I usually cook at home:&lt;br /&gt;&lt;br /&gt;Tokwa't Baboy (Tofu and Pork)&lt;br /&gt;&lt;br /&gt;There's many variations in cooking this easy dish..  all you need really is&lt;br /&gt;&lt;br /&gt;1 tofu&lt;br /&gt;pork&lt;br /&gt;garlic&lt;br /&gt;onions&lt;br /&gt;ginger&lt;br /&gt;onions&lt;br /&gt;vinegar (Datung puti)&lt;br /&gt;Soy Sauce (Marca Pina)&lt;br /&gt;red peppers&lt;br /&gt;sal and black pepper&lt;br /&gt;&lt;br /&gt;Cut the tofu into small squares&lt;br /&gt;Cut the pork the same size as the tofu, and don't forget to include the skin and fat&lt;br /&gt;on a deep fryer, fry up the pork until lightly brown, then remove from the pan&lt;br /&gt;fry the tofu until lightly golden then add the pork.  &lt;br /&gt;add the onions, garlic, and ginger into the pan and fry for a short minute&lt;br /&gt;pour into a bowl, add vinegar and soy sauce and serve!&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Alvin's Rippin Ribs!!&lt;br /&gt;&lt;br /&gt;This is one of my favorite things to cook. It was great because we both agreed on the idea! The name Sarah&lt;br /&gt;thought of was Isla Pinas for the restaurant since the first idea we had (Pearl Of The Orient) was already taken.  I thought&lt;br /&gt;it would be great if the whole restaurant was decorated Pinoy Style!  we're talking half a nipa hut for a bar..  have all bamboo&lt;br /&gt;and wood type furniture accented by filipino decorations like big wooden spoon and forks..  of course.. who will contribute..everyone we know who can cook!  that's bascially everyone!  So I thought I'd have a poll to see if the idea would interest them.  But before we go through the whole idea, we have to work on alot of things, like selling the idea among&lt;br /&gt;the family members.  There's the financial aspects of running aa family owned restaurant, it takes a good handfull of money to rent property, buy equipment, supplies, pay for the workers and such...how taxes is gonna be handled.. should we hire an accountant?  then there's the location, where a good location would be, Sarah suggested Chesterfield..  Then there's the issue of who's gonna run it, and how many people is needed to work the kitchen, the bar, the tables...  and there's more.. so before we start an idea.. an open discussion is needed first! Along with the funny 'Estrada Jokes..Mang Ambet has many hidden talents.. some too much to mention *cover kids ears* joke! joke!  yes cooking is one of his ..'forte' sort to speak.. so to explain how to cook our next recipe..which is SISIG.. here's Mang Ambet!!!  *bow bow* IDOL!!!!!!!!!!!!!!!!!&lt;br /&gt; &lt;br /&gt;Ingridients&lt;br /&gt;&lt;br /&gt;1 whole garlic &lt;br /&gt;1 whole onions&lt;br /&gt;1/2 ginger ?&lt;br /&gt;3-4 red peppers (Sile Labuyo)&lt;br /&gt;pigs ears&lt;br /&gt;pigs belly&lt;br /&gt;lemon (preferably kalamansi)&lt;br /&gt;1 egg&lt;br /&gt;soy-sauce &lt;br /&gt;&lt;br /&gt;Una, you boil the pork 10 minutes for the pig's ears then 40 minutes for the pig's belly.  &lt;br /&gt;Wait until the pig is done, then cut up the meat into small cubes.  (wag sobra liit!!), then&lt;br /&gt;you cut up the garlic, onions, ginger, and peppers into small small cubes. (if you have high cholesterol or&lt;br /&gt;your one of those people looking out for your 'figure,' then I wouldn't try it)  Other than that.. it's pure&lt;br /&gt;mix of heavenly goodness!&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;1 clove of garlic&lt;br /&gt;1/4 cups of chopped onions&lt;br /&gt;4 pieces of freshly cooked bacon&lt;br /&gt;1/3 cups of green and red bell peppers mixed&lt;br /&gt;1/2 tomato&lt;br /&gt;2 whole eggs&lt;br /&gt;1/3 cups of sharp cheddar or spicy monterey jack cheese&lt;br /&gt;2 breakfast sausage links&lt;br /&gt;pinch of salt and pepper mix&lt;br /&gt;&lt;br /&gt;Preparations:&lt;br /&gt;&lt;br /&gt;in a pan, fry your bacon first until golden brown and crispy.  while the bacon is frying, slice up your garlic, onions, and tomatoes.  when the bacon is done, proceed frying the cut up veggies in the same pan, in low heat, using the bacon fat &lt;br /&gt;as part of the flavor.  now strain the veggies when they're a bit soft and cooked, and mix into a bowl with the two eggs.&lt;br /&gt;stir and scramble until fully mixed and fry on the same pan again using the same oil.  while the egg is slowly frying, chop&lt;br /&gt;up the bacon into bits, and cut up the sausage links into small cubes and add to the egg.  add a bit of salt and pepper to taste, and wait till the egg is fully cooked.. and tada! Now this easy fried rice requires only 6 main ingredients!&lt;br /&gt;&lt;br /&gt;Ingridients are:&lt;br /&gt;&lt;br /&gt;fresh clove of garlic&lt;br /&gt;grounded black pepper&lt;br /&gt;salt&lt;br /&gt;water&lt;br /&gt;rice&lt;br /&gt;Star Margerine&lt;br /&gt;&lt;br /&gt;first thing to do is to prepare your ingridients.. make sure you use cold rice when you make the rice! &lt;br /&gt;the next step will be a bit of a mess so get ready.. seperate the rice by hand, until you have the loose&lt;br /&gt;grains..cut up the garlic into small slices, while your cutting be sure to prepare the stickless pan with &lt;br /&gt;a bit of  oil now fry that garlic until it's golden brown.. don't burn the garlic or else it'll be bitter! in a &lt;br /&gt;seperate cup, mix little water, salt, and black pepper, this mix you slowly mix with the frying garlic.  &lt;br /&gt;now you do this step easier by using a spoon.. spoon the mix into the pan while the garlic is frying, &lt;br /&gt;and let the water boil down until what you have is a mix of salt-water and garlic oil. now your only &lt;br /&gt;going to mix a little of this sauce into the rice plus the fried garlic and mix well.  dump the rest of the &lt;br /&gt;sauce, or possibly use it for later use, and use the same pan to fry the rice.  fry the rice until it feels&lt;br /&gt;slightly dry, and add half a spoon of Star Margerine and mix into the rice.. refry for another 3 minutes&lt;br /&gt;on low heat and serve! While your garlic is frying, soak your Spanish peanuts in some salt water.  When the garlic is done, strain the peanuts before frying in deep oil.  Wait until the skin of the peanuts start to peal off, or a bit of discoloration begins in the peanuts before removing the cooked peanut from the hot oil and remember do not fry too long or the peanuts taste bitter.  When the peanuts is crispy enough to eat, add a bit of garlic salt (or spicy red hot peppers) and serve.  Best eaten while cripsy and witha  nice cold beer!!
